Tennessee Onions
Description
This recipe uses sweet onions, such as Vidalia or Texas Sweets, sliced into even rings about ¼ to ½ inch thick and separated. The onions are arranged in a baking dish prepared with non-stick spray. They are seasoned with garlic salt and black pepper, then dotted with unsalted butter cut into small pats distributed across the onions.
A combination of shredded sharp cheddar, mozzarella, and grated parmesan cheese is spread over the onions and butter. Baking at 350 degrees Fahrenheit for 30 minutes melts the cheeses until bubbly and golden brown in spots, adding a rich, savory topping. The baking softens the onions while retaining slight firmness, complemented by the browned cheese bits which add texture and flavor.
This dish is versatile as a side dish for cookouts, served over hamburgers or steaks, or even as an option for vegetarians at meals. Garnished with fresh herbs such as oregano, chives, or thyme, it adds color and a fresh aroma. Using high-quality cheese enhances the taste noticeably, and adjusting salt is advised since cheese provides significant saltiness.
The recipe emphasizes using evenly thick onion slices for uniform baking and suggests the best sweet onion varieties for optimal flavor. The baked cheese topping does not produce a custard-like filling but rather a richly topped vegetable dish with characteristic baked onion softness.
Ingredients
- 2-3 whole onions or any sweet onion will do, Vidalia
- 4 tablespoon butter unsalted
- 1 teaspoon garlic salt
- ½ teaspoon black pepper
- 1 Cup cheddar cheese the better quality, the better taste, shredded sharp
- 1 Cup mozzarella cheese shredded
- ½ cup Parmesan Cheese grated
- oregano fresh, or other herbs for garnish
Instructions
- Using non-stick cooking spray, prepare a 9x9 (or 9x13) baking dish.
- Heat oven to 350
- Slice the Vidalia onions in ¼ to ½ inch slices and separate the rings.
- Lay the rings in the prepared baking dish
- Sprinkle the onion rings with garlic salt (about 1 tsp), pepper (about ½ tsp).
- Cut the butter into pats and place around the dish on top of the onions.
- Spread the cheddar and mozzarella cheeses on top of the onions and then top with the grated parmesan cheese.
- Bake at 350 uncovered for 30 minutes or until bubbly and the cheese has started to brown (browned cheese bits is one of the best parts!)
- Remove from the oven, allow to cool for a few minutes, garnish with some fresh herbs (oregano, chives, thyme all work well) and then serve.
Notes
- Serve Tennessee Onions as a side to hamburgers, steak, or as a vegetarian option at cookouts.
- Use sweet onions like Vidalias or Texas Sweets cut into ½ inch thick slices for best texture and flavor.
- Ensure even thickness of slices and separate rings for consistent cooking.
- Select high-quality sharp cheddar and other cheeses for the best taste impact.
- Check seasoning; the cheese and garlic salt contribute saltiness so adjust accordingly.
