Teriyaki Glazed Salmon 照り焼きサーモン

Ingredients
- 2 salmon fillets(with or without skin) *1
- 1 tsp salt
- 2 tbsp soy sauce *2
- 2 tbsp cooking sake *2
- 2 tbsp mirin *2
- 1 tbsp sugar
- 1 tbsp plain flour
- 1 tbsp cooking oil *3

Instructions
- Sprinkle salt over the salmon fillets on both side.
- Leave the fillets for 10 minutes.
- Mix soy sauce, sake, mirin and sugar in a small saucepan over medium heat till the sugar dissolves and set it aside.
- Pat dry the salmon fillets with a kitchen towel on both sides.
- Dust the plain flour over the fillets on both sides and remove excess flour with a brush.
- Heat the oil in a frying pan and add the salmon fillets skin side down.
- Cook the fillets for 2 minutes over medium-high heat.
- Turn them over and add the teriyaki sauce to the pan. Simmer until the teriyaki sauce thickens and the other side of the salmon is cooked.
- Occasionally drizzle the sauce over the salmon fillets with a spoon.
- Serve with plain cooked rice.

- *1 I used frozen Tasmanian salmon. It comes with skin. Most frozen salmon with skin do not have the scales removed. So you need to descale.
- *2 Japanese food substitution if you can not access those ingredients.
- *3 I used sesame seed oil for extra flavour but olive oil, or vegetable oil are good.
