Tex Mex Chili Gravy (Mexican Brown Gravy)

Tex Mex Chili Gravy is a rich brown sauce made by cooking flour in bacon fat until golden, then adding chili powder, cumin, garlic and onion powders, Mexican oregano, salt, pepper, and beef broth. The gravy becomes thick and flavorful, combining smoky, spicy, and earthy notes. It's smooth with a medium-thick consistency, making it suitable for drizzling over meats, beans, or other Tex-Mex dishes to add depth and moisture.

Description

This Tex Mex Chili Gravy starts with browning flour in bacon fat to create a flavorful roux, forming the base of the sauce. The addition of chili powder, cumin, garlic and onion powders, and Mexican oregano brings characteristic southwestern spices and aroma. Simmering with beef broth allows the gravy to thicken and deepen in flavor. The result is a well-seasoned gravy with a touch of smoky bacon fat balancing the spices.

Its thick yet pourable texture makes it ideal for topping dishes like grilled meats, tacos, or enchiladas. It can also add a spicy, savory element to eggs or rice. The gravy enhances texture and moisture while integrating classic Tex Mex seasonings.

Adjusting the thickness with additional broth or water allows flexibility depending on how it’s used. The recipe yields about 3 cups and can be served warm right away.

Ingredients

Servings
  • 1/4 cup bacon fat lard or vegetable oil
  • 1/4 cup all-purpose flour
  • 2 tbsp chili powder
  • 2 tsp cumin ground
  • 2 tsp garlic powder
  • 1 tsp. onion powder
  • 1/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp Mexican oregano
  • 2 cups beef broth

Instructions

  1. Heat the bacon fat over medium-high heat, then whisk in the flour. Cook until it turns a light yellow to golden brown, about 3-5 minutes.
  2. Add the spices, Mexican oregano and beef broth. Whisk until smooth and it starts to thicken. Turn heat to low and simmer for 10 minutes. Thin with more beef stock or water if needed for a gravy-like consistency.

Notes

  • This recipe yields about 3 cups of gravy, suitable for multiple servings.
  • To adjust consistency, thin with additional beef broth or water if needed.
  • Based on Robb Walsh's The Tex Mex Cookbook, preserving authentic flavor.
