Dressing

  • ½ cup rice vinegar 120 mL
  • ¼ cup sugar
  • 2 Tbsp sesame oil 30 mL, toasted
  • ½ tsp salt
  • ½ tsp red pepper flakes crushed
  • 4 cloves garlic minced

Salad

  • 1 oz bag coleslaw 397 g, with shredded carrots
  • 1 oz bag carrot 397 g, with shredded carrots
  • 6 green onions sliced
  • 1 red bell pepper diced
  • 1 bunch cilantro about 1 cup loose, ½ cup chopped
  • mint torn into a few pieces, a few leaves

Instructions

  1. Dressing: Whisk together all dressing ingredients to dissolve the sugar.
  2. Salad: In a separate bowl, toss together all salad ingredients.
  3. Assemble: Drizzle dressing over salad and toss to evenly combine. For best results, chill in the fridge for at least an hour before serving.

Notes

  • Store leftover salad in the fridge for up to 1 week in an airtight container.
