Thai Chicken Pizza

This Thai Chicken Pizza features a homemade bread flour dough topped with grilled chicken, diced green bell peppers, mozzarella cheese, and Thai sweet chili sauce. The dough is mixed and allowed to rise before being stretched or rolled out and baked on a preheated pizza stone. The combination offers a chewy crust with a balance of savory grilled chicken and sweet-spicy sauce finished with melty mozzarella.

Description

The Thai Chicken Pizza recipe builds its crust from scratch using bread flour, yeast, sugar, oil, water, and salt to create a dough that is kneaded to a medium-high speed and allowed to rise. The use of bread flour contributes to a better texture and chewiness in the crust. After the dough rises, it's divided and shaped by hand or rolling pin. Preheating a pizza stone to 420°F ensures a crisp base.

The toppings are simple but flavorful: grilled boneless, skinless chicken thighs diced, green bell peppers seeded and diced, mozzarella cheese, and Thai sweet chili sauce spread over the pizza before baking. Baking times range from 10 to 16 minutes, with an initial phase on parchment paper to help slide the pizza onto the stone and subsequent direct baking to melt cheese and crisp the crust.

This pizza pairs elements of Thai flavors with pizza format, balancing the savory grilled chicken and cheese with the sweetness and mild heat of the chili sauce and fresh bell pepper crunch. It can be served as a casual meal and customized with leftover grilled chicken or frozen precooked chicken.

For best results, ensure the dough is not too sticky; kneading time can be adjusted up to 15 minutes. Using a pizza stone helps achieve a well-cooked crust. Allowing the dough to rise in a warm but not hot environment accelerates fermentation. Baking times will vary depending on oven and pizza size.

Ingredients

Servings

Toppings:

  • 2 pieces chicken Boneless and skinless, grilled thighs
  • 1 green bell pepper (Medium sized)
  • 2 cups mozzarella cheese (1 cup per pizza)
  • ½ cup Thai sweet chili sauce (¼ cup per pizza)

Dough:

  • 1&¼ cup water
  • 2 tablespoons vegetable oil
  • 2 tablespoons sugar
  • 1 tablespoon active dry yeast
  • 3 cups bread flour
  • 1 teaspoon salt

Instructions

  1. Pour 1 & ¼ cups of water into the Bosch mixer. Then, put 2 tablespoons of sugar, 2 tablespoons of oil and 1 tablespoon of active dry yeast. Turn on the lowest setting #1. Let it mix a little bit, turn off and wait for 5 minutes.
  2. After that, in a bowl put 3 cups of bread flour and 1 teaspoon of salt. Mix it well.
  3. Turn on the mixer at the lowest setting #1, slowly add the flour mixture from step 2. When the dough comes together, increase the speed to #3 medium high speed. Let it run for 10 minutes. If the dough is too sticky, you can run it for 15 minutes.
  4. Next, put the dough in the bowl and cover with the wet towel. Let it rise at room temperature for 45 minutes . (My trick to speed up dough rising time is by preheating the oven at 200F, then turning off the oven. Put the dough into the oven and cover with a wet towel. The dough rises in 30 minutes.)
  5. Wash, remove seed and dice 1 medium sized green bell pepper.
  6. Dice 2 pieces of grilled chicken thigh into cubes. (You can use leftover grilled chicken or frozen store bought one.)
  7. When the dough rises, uncover and take out the dough.
  8. Dust some bread flour on the surface, divide the dough into 2 pieces.
  9. Use hands to stretch and flatten the dough or use a rolling pin to roll and flatten the dough.
  10. The following step, pour ¼ cup of Thai sweet and chili sauce on the dough. Then, spread it evenly on the dough.
  11. Sprinkle ½ cup of mozzarella cheese on the Thai sweet chili sauce over the flatten dough.
  12. After, sprinkle ¼ cup of the diced green bell pepper and ½ cup of diced grilled chicken. Then, sprinkle another ½ cup of mozzarella cheese on top of the chicken and green pepper.
  13. Preheat the oven with the stone at 420F. Then, slide the pizza on the stone and bake it for 12-15 minutes until the cheese melts and gold brown. (If it is too hard to slide the pizza on the stone, put the pizza on the parchment paper and place it on the stone. Let it bake for 5-8 minutes. Then, take out the parchment paper and continue to bake the pizza for 5-8 minutes until the cheese melts.)

Notes

  • Leftover or frozen grilled chicken works well, diced into cubes.
  • Wash, de-seed, and dice green bell pepper into small pieces before topping.
  • Mozzarella cheese is recommended; other cheeses may be used by preference.
  • Store-bought Thai sweet chili sauce is a suitable alternative to homemade.
  • If dough is sticky, knead longer (up to 15 minutes) and dust flour as needed.
  • Divide the dough based on desired pizza size; two medium pizzas recommended here.
  • A pizza stone preheated at 420°F yields best crust texture; use parchment paper to transfer pizza if needed.
  • Bake 5-8 minutes on parchment, then remove it and bake an additional 5-8 minutes until cheese melts.
