Thai Chicken Skewers with Cucumber Yogurt Dipping Sauce

These Thai Chicken Skewers are fantastic. The Thai chicken flavor is so good with the cucumber yogurt sauce for dipping, and its low in calories!

Ingredients

Servings
  • 3 boneless skinless chicken breasts
  • Wooden skewers (soaked for 20 minutes)

Chicken Marinade

  • 4 garlic cloves minced
  • 1/2 bunch of fresh Cilantro
  • 2 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • 2 teaspoon curry powder
  • 2 teaspoon cumin
  • 2 teaspoon paprika

Cucumber Yogurt Dip

  • 1 cup plain greek yogurt
  • 1-2 tablespoons cilantro chopped
  • 2 teaspoon cucumber chopped
  • 2 teaspoon carrot chopped
  • 1 teaspoon milk
  • salt and black pepper to taste

Instructions

  1. Soak the wooden skewers in water for 20 minutes.
  2. Blend all the chicken marinade ingredients in a food processor or blender.
  3. Cut the chicken breasts into 4 to 5 long strips. Place strips into a large bowl, stir in the marinade, and refrigerate for at least 30 minutes.
  4. Combine all the yogurt dip ingredients in a medium size bowl and refrigerate.
  5. Thread the chicken onto the wooden skewers.
  6. Grill over medium heat until cooked through about 5-6 minutes on each side (165-degrees F internal temperature)
  7. Serve chicken with a side of yogurt sauce for dipping.

Notes

  • Don't forget to soak the skewers for at least 2o minutes if using wooden skewers 
  • Try dipping the grilled chicken in peanut sauce or hot honey
  • Serve with cooked Jasmine rice or basmati rice
  • Store leftovers in an airtight container for up to 4 days. For best results, don't reheat in the microwave. Heat in a non-stick skillet over medium heat with a splash of water. Cover and allow to be heated through.
