Ingredients

  • 1 pound Little Potato Co. Creamer potatoes I used Blushing Belles
  • 2 teaspoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 6 cups packed chopped kale
  • 1 small zucchini grated (1 cup)

The Dressing:

  • ¾ lime juiced
  • 2 tablespoon natural peanut butter
  • 1 tablespoon + 1 teaspoon soy sauce
  • 2 teaspoons agave nectar or honey
  • 1 ½ teaspoons fish sauce
  • 1 ½ teaspoons rice vinegar
  • ½ teaspoon Chili garlic sauce

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Cut the potatoes in half, place on a baking sheet, then toss with olive oil, salt and pepper. Cook until tender when pierced with a fork and golden brown, stirring halfway through, about 30 minutes.
  3. In a large bowl, mix the roasted potatoes, kale, grated zucchini and dressing. Toss to combine. Serve.

The Dressing:

  1. In a medium bowl, whisk together the lime juice, peanut butter, soy sauce, agave nectar (or honey), fish sauce, rice vinegar and chili garlic sauce. Whisk until smooth.
