Chicken and rice casserole is a zesty, tasty dish with fluffy rice, seasoned chicken, veggies, and cranberries — perfect for Thanksgiving!

Ingredients
- 1.5 lbs rotisserie chicken chopped (about 4 cups)
- 1 medium yellow onion diced
- 2 ribs celery diced
- 1 medium carrot peeled and shredded
- 1 tbsp olive oil
- 1/4 cup dried cranberries
- 1 cup jasmine rice
- 1 chicken bouillon cube
- 1 tsp poultry seasoning
- 1 tsp ranch seasoning
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1 1/4 cups hot water
Instructions
- Either use a large oven proof skillet or casserole dish. Preheat oven to 350°F.
- Add the oil and sauté the vegetables and cranberries for 3 minutes over medium heat.
- Add the rice, bouillon cube, poultry seasoning, Ranch seasoning, salt and black pepper. Stir to coat vegetables and cook for another minute.
- If using a large oven proof skillet: add the chicken and pour in the hot water, stir and cover with lid. Transfer to oven and bake 35 minutes. Remove from oven and let sit for 10 minutes. Fluff rice before serving and sprinkle with chopped parsley.
- If using a Dutch oven or casserole dish: transfer sautéed vegetables to Dutch oven or casserole dish along with the chicken. Pour in the hot water, stir and cover with foil. Transfer to oven and bake 35 minutes. Remove from oven and let sit for 10 minutes. Fluff rice before serving and sprinkle with chopped parsley.
