Description
Paletas are traditional Mexican popsicles made by combining fresh fruit, sugar, and lime juice to create a flavorful, cool dessert. This recipe allows you to choose your favorite fruit, finely chopping half of it to retain texture and blending the rest into a smooth puree with sweetener and lime juice. Adding water as needed adjusts consistency for easy freezing.
The combination of blended fruit and chunks results in popsicles that have both smoothness and little bursts of fruit bite. After pouring into molds, the mixture expands slightly during freezing, so some space is left at the top. The finished paletas freeze solid after at least four hours.
To serve, run the mold briefly under warm water to loosen the paletas before removing them by their sticks. Tajin seasoning is suggested as an optional topping, adding a spicy, tangy layer of flavor that complements the sweet fruit and brightens the popsicles.
Ingredients
Fruit (Pick One)
- 6 cups strawberry fresh or frozen and thawed, roughly chopped
- 6 cups Mango fresh or frozen and thawed, roughly chopped
- 6 cups pineapple chunks fresh, canned, or frozen and thawed
- 6 cups kiwi about 12 kiwis, roughly chopped
The Rest
- ¼ cup sugar or honey
- ¼ cup lime juice fresh
- water as needed
Instructions
- Blend: Choose the fruit you want to use, then divide it in half. Finely chop half of the fruit and set it aside. Put the remaining fruit in a blender, along with the sugar and lime juice. Blender until smooth, adding a splash of water as needed to get things moving.
- Mold: Stir chopped fruit into blended mixture. Pour into molds, leaving a little space at the top for them to expand. Firmly tap the mold on the counter to remove any air bubbles. Insert sticks and freeze until hard (at least 4 hours).
- Serve: Run the mold under warm water for a few seconds to loosen them up, then remove from the mold.
Notes
- Try Tajin seasoning as a topping by dipping the paleta in water then sprinkling it with Tajin for extra flavor.
