Toffee Chocolate Chip Cookies Recipe

This recipe creates toffee chocolate chip cookies combining finely ground oats, semi-sweet chocolate chips, and English toffee bits for a chewy texture with sweet crunch. The melted butter and sugars form a rich dough chilled before baking, allowing the edges to become golden while keeping the centers slightly soft. These cookies balance buttery sweetness with the crunch of toffee and the familiar chocolate chip bite.

Description

The Toffee Chocolate Chip Cookies Recipe blends all-purpose flour with ground oats to add a subtle nuttiness and texture to the dough. Melted unsalted butter, light brown sugar, and granulated sugar combine for sweetness and moisture. Semi-sweet chocolate chips and English toffee bits fold into the batter, providing pockets of melted chocolate and crunchy toffee throughout each cookie. The mixture is chilled to firm up before baking at a moderate temperature, which ensures the edges crisp while the interior remains tender and slightly underbaked for chewiness.

The baking process focuses on even spacing and portion control, with 2 1/2 tablespoon scoops and allowance for spread. Cooling cookies on the sheet until firm enough to lift helps them maintain shape. The recipe yields cookies that are suitable for snacks or dessert, delivering contrasting textures from soft centers and golden edges enhanced by the sweet crunch of toffee bits.

Ingredients

Servings
  • 2 cups all-purpose flour
  • 3/4 cup oats ground
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup butter melted, unsalted
  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large egg
  • 12 ounce chocolate chips semi-sweet
  • 1 cup English toffee bits

Instructions

  1. Place a heaping 3/4 cup of dry oats in the food processor. Process until finely ground.
  2. Dump both sugars and the vanilla extract in the bowl of an electric mixer. Turn on low and add the melted butter, mix to combine. With the mixer running, pour in the eggs. Add the baking soda, salt, and slowly add the flour and powdered oatmeal. Scrap the bowl and mix to combine, then fold in the chocolate chips and toffee bits.
  3. Chill the dough for at least 30 minutes, OR form into a log on a piece of freezer paper. Wrap and freeze.
  4. Preheat the oven to 325 degrees F (or 300 degrees F convection.) Line baking sheets with parchment paper and place equal two 2 1/2-tablespoon portions on the baking sheets 3 inches apart. Use either a cookie scoop or cut the frozen dough into rounds.
  5. Bake until the edges are golden, but the centers look slightly under baked. Remove from the oven and cool on the cookie sheets until firm enough to pick up. (Baking time varies greatly on the temperature of the dough and whether you are baking with a conventional oven or convection. Conventional: chilled dough 15-20 minutes, frozen dough 20-25 minutes. Convection: chilled dough 10-12 minutes, frozen dough 18-22 minutes.)
