  • 1 cup onion red, chopped
  • ½ bell pepper red; chopped
  • 2 garlic cloves
  • 3 tablespoons soy sauce
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • smoked paprika pinch
  • salt pinch
  • 1 tablespoon of oil
  • 8 corn tortillas
  • lettuce chopped; handful
  • 1 cup diced tomatoes

Instructions

  1. Preheat the oven to 375 degrees F and lightly grease a baking sheet.
  2. Slice tofu into 1-inch cubes and bake for 10 minutes.
  3. In a food processor, combine tofu, onion, bell pepper, garlic, soy sauce, cumin, chili powder, paprika, and salt.
  4. In a large pan and over high heat, add oil, followed by the tofu mixture. Cook for 5 minutes, stirring frequently to prevent burning.
  5. Toast the tortillas directly on the gas burner or in a pan. Lay tortillas on a plate and add a generous serving spoonful of the tofu mixture to each tortilla.
