Tomatillo Avocado Dressing
Description
This Tomatillo Avocado Dressing features tomatillos, which are boiled to soften and mellow their tartness before blending with creamy avocado for a smooth texture. Garlic and jalapeño pepper contribute savory and spicy elements, while white balsamic vinegar and lime juice add bright acidity. Cilantro leaves are incorporated last to maintain their fresh green flavor without overpowering the dressing.
The preparation results in a luscious, slightly chunky dressing that carries a tangy yet smooth flavor. The mild heat from the jalapeño is adjustable to taste, and the herbs add a fresh dimension that complements the citrus and vinegar tang.
This dressing is versatile for salads, grilled vegetables, or as a dip for chips. It can be stored refrigerated and adjusted with extra jalapeño or salt to suit personal flavor preferences.
Ingredients
- 4 tomatillos
- ½ avocado
- 1 clove garlic minced
- ½ jalapeno pepper with seeds
- ¼ teaspoon salt
- 2 Tablespoons white balsamic vinegar
- 1 Tablespoon lime juice
- 1 cup cilantro leaves
Instructions
- Remove husk from tomatillos and rinse to remove any sticky residue. Bring water to boil in a pot, add tomatillos and boil for 4-5 minutes. Remove from boiling water, rinse with cold water and allow to cool for a few minutes.
- Add cooled tomatillos, avocado, garlic, jalapeño, salt, white balsamic vinegar and lime juice into a high-powered blender or food processor and blend until everything is incorporated and dressing is relatively smooth. Add cilantro leaves and process a few seconds more.
- Taste and add more jalapeño and salt if needed.
