Tomato Avocado Chickpea Salad

Ingredients

  • 15 ounce chickpeas rinsed and drained, canned
  • 1 1/2 cups Persian cucumber or English cucumber; diced
  • 1 cup cherry tomato halved
  • 1 avocado peeled and diced
  • 1/2 cup red onion diced
  • 1/4 cup flat leaf parsley chopped
  • 1/2 cup feta cheese cubed

Lemon Vinaigrette

  • 1/4 cup lemon juice fresh
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon oregano dried
  • 1/4 teaspoon garlic powder
  • salt freshly ground, to taste
  • black pepper freshly ground, to taste

Instructions

  1. In a large serving bowl combine the chickpeas, cucumber, tomatoes, red onion, parsley, and feta.
  2. Add all of the ingredients for the vinaigrette into a small bowl or jar. Whisk or shake until well combined and then pour either half or all of the vinaigrette over the salad depending on your preferences.
  3. Add in the avocado and gently stir to combine everything being careful not to mash the avocado. Taste for seasoning and serve.
