Tomato, Fig and Burrata Salad

This tomato, fig and burrata salad recipe is fresh, in-season, and absolutely delicious for a dinner party or pot luck BBQ.

Ingredients
- 10 fig thinly sliced, California variety
- 3 tomato thinly sliced, heirloom
- ½ red onion thinly sliced, medium
- 1/3 cup capers
- 4 oz burrata cheese
- ¾ cup basil fresh
- ½ cup mint fresh
- ¼ cup fig jam
- 2 tbsp. olive oil
- 2 tsp. salt
- lemon juice of 1

Instructions
- Arrange the thinly sliced heirloom tomatoes and figs in a fan on a large serving platter.
- Add the red onion, capers, basil, and mint over top of the tomatoes and figs.
- Sprinkle the salt on top of the entire dish.
- In a small bowl, combine the olive oil, lemon juice, and fig jam.
- Pour over top of the salad.
- Place the burrata cheese in the middle of the salad.
- To serve, break the burrata cheese and enjoy!

- Notes
- To make this vegan, serve without the burrata cheese. You can use pre-made fig jam OR make your own by roasting the figs slightly, removing the insides, and blend together! This salad is a HUGE hit at parties. The salad can be kept in the fridge in an airtight container for 3 – 4 days.
