Tomato Vinaigrette
Description
The Tomato Vinaigrette combines ripe tomatoes, lemon juice, garlic, red bell pepper, fresh basil, and sun-dried tomatoes with balsamic vinegar and tomato puree. These ingredients are blended together and then pressed through a fine sieve to remove pulp, resulting in a smooth, vibrant dressing. The lemon and vinegar give it a bright acidity, while the sun-dried tomatoes add depth and subtle sweetness. Garlic introduces a savory bite, and the basil complements with herbal freshness.
This dressing can be served over mixed greens or vegetables, or thinned with water as a sauce. It can also be transformed into a creamy dip when combined with Greek yogurt or crème fraîche. Adjusting thickness is possible by reducing water or adding oil for richness.
Pulp leftover after straining is flavorful and can be repurposed into pasta sauces, minimizing waste. Adding chili flakes is an option for those who enjoy a touch of spice. The vinaigrette provides a fresh and customized dressing for a variety of dishes.
Ingredients
- 700 g tomato ripe
- 1 lemon (juice only)
- 3 garlic chopped, clove
- 1 red bell pepper de-seeded
- 10 g basil fresh
- 100 ml water
- 2 tablespoon balsamic vinegar
- 4 sun-dried tomatoes
- 2 tablespoon tomato puree
- 1 pinch sea salt
- 1 pinch black pepper
Instructions
- Put all of the ingredients into a blender.
- Blend until smooth.
- Put a fine sieve over a bowl and pour in the mixture.
- Mash down the mixture in a sieve, letting the dressing pour through to the bowl until you are just left with pulp.
Notes
- Do not discard the pulp after straining; it is excellent to mix into pasta sauces.
- Replace some water with oil if you prefer a thicker, richer dressing.
- Mix with Greek yogurt or crème fraîche to create a flavorful dip.
- Add leftover fresh herbs like basil to enhance the freshness and reduce waste.
- Sprinkle red chili flakes for a subtle spicy kick if desired.
