Description

The Tomato Vinaigrette combines ripe tomatoes, lemon juice, garlic, red bell pepper, fresh basil, and sun-dried tomatoes with balsamic vinegar and tomato puree. These ingredients are blended together and then pressed through a fine sieve to remove pulp, resulting in a smooth, vibrant dressing. Ingredients

  • 700 g tomato ripe
  • 1 lemon (juice only)
  • 3 garlic chopped, clove
  • 1 red bell pepper de-seeded
  • 10 g basil fresh
  • 100 ml water
  • 2 tablespoon balsamic vinegar
  • 4 sun-dried tomatoes
  • 2 tablespoon tomato puree
  • 1 pinch sea salt
  • 1 pinch black pepper

Instructions

  1. Put all of the ingredients into a blender.
  2. Blend until smooth.
  3. Put a fine sieve over a bowl and pour in the mixture.
  4. Mash down the mixture in a sieve, letting the dressing pour through to the bowl until you are just left with pulp.

Notes

  • Do not discard the pulp after straining; it is excellent to mix into pasta sauces.
  • Replace some water with oil if you prefer a thicker, richer dressing.
  • Mix with Greek yogurt or crème fraîche to create a flavorful dip.
  • Add leftover fresh herbs like basil to enhance the freshness and reduce waste.
  • Sprinkle red chili flakes for a subtle spicy kick if desired.
