Report
This Tortellini Salad is a delicious combination of cheese-filled tortellini, fresh veggies, and a tangy homemade dressing. With its creamy Cotija cheese and tangy dressing, it's a perfect blend of delicious textures and flavors.

Ingredients
- 1 pound cheese-filled tortellini
- 1 cup cherry tomatoes halved
- 2 cups fresh arugula
- ½ cup black olives sliced
- ½ cup crumbled cotija cheese or grated Parmesan cheese
- ¼ cup red onion thinly sliced
- ½ red bell pepper diced
- ½ green bell pepper diced
For the dressing:
- ½ garlic clove minced
- ¼ cup olive oil
- 1 tablespoon wine vinegar
- salt and pepper to taste
Instructions
- Cook the tortellini according to the package instructions until al dente. Drain and rinse with cold water to cool them down.
- Combine the cooked tortellini, cherry tomatoes, fresh arugula, black olives, Cotija cheese or Parmesan cheese, red onion slices, and diced red and green bell peppers in a large bowl.
- Whisk together the minced garlic, olive oil, wine vinegar, salt, and pepper in a small bowl to make the dressing.
- Pour the dressing over the tortellini salad and toss gently to coat all the ingredients with the dressing.
- Taste and adjust the seasoning as needed.
- Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
Notes
- Soak the red onion: If you're not a fan of strong onion flavor, you can soak the sliced red onion in cold water for a few minutes before adding it to the salad. This simple trick helps reduce the onion's sharpness, making it more palatable in the salad.
- Protein-Packed: For those who like a protein punch in their salads, this variation is a must-try. Add grilled chicken or shrimp to the salad to make it a complete meal. The added protein will make this dish even more satisfying.
- Different Cheese: If you want to experiment with different cheese flavors, this variation is a great choice. Instead of the traditional Cotija or Parmesan cheese, try a creamy Gorgonzola or a sharp cheddar. This will give your tortellini salad a unique and delicious cheese twist.
- Making it ahead of time: Simply prepare as directed and store in the refrigerator. It's best to add the fresh arugula just before serving to keep it crisp.
- Fridge: This tortellini salad can be stored in the refrigerator for up to 3–4 days. I recommend placing it in an airtight container to maintain its freshness.
- Freezing: Unfortunately, this tortellini salad recipe doesn't freeze well due to the nature of the ingredients. The texture of the tortellini and vegetables can become mushy once thawed, so I would recommend something other than freezing them.
