Ingredients

  • 1 pound cheese-filled tortellini
  • 1 cup cherry tomatoes halved
  • 2 cups fresh arugula
  • ½ cup black olives sliced
  • ½ cup crumbled cotija cheese or grated Parmesan cheese
  • ¼ cup red onion thinly sliced
  • ½ red bell pepper diced
  • ½ green bell pepper diced

For the dressing:

  • ½ garlic clove minced
  • ¼ cup olive oil
  • 1 tablespoon wine vinegar
  • salt and pepper to taste

Instructions

  1. Cook the tortellini according to the package instructions until al dente. Drain and rinse with cold water to cool them down.
  2. Combine the cooked tortellini, cherry tomatoes, fresh arugula, black olives, Cotija cheese or Parmesan cheese, red onion slices, and diced red and green bell peppers in a large bowl.
  3. Whisk together the minced garlic, olive oil, wine vinegar, salt, and pepper in a small bowl to make the dressing.
  4. Pour the dressing over the tortellini salad and toss gently to coat all the ingredients with the dressing.
  5. Taste and adjust the seasoning as needed.
  6. Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
