Tortilla Chip-Crusted Baked Jalapeño Poppers
Description
This recipe features halved jalapeños with the membranes and seeds removed to reduce heat. They are stuffed with a mixture of light cream cheese, shredded Mexican cheese, and a splash of almond milk to create a smooth, creamy filling. Each stuffed pepper is dipped in a beaten egg mixture, then rolled in finely crushed tortilla chips to create a crunchy crust. Baking at 375 degrees Fahrenheit for around 15 to 20 minutes melts the cheese filling and crisps the coating. Using flavored tortilla chips can lend subtle additional flavors to the poppers.
The balance between the creamy cheese and the crispy crust offers a pleasing texture contrast, while the mild heat from the jalapeño is softened by the cheese mixture. These poppers are best served hot directly from the oven to enjoy the melted interior and crunchy exterior at their peak.
Choose your favorite type of tortilla chips to customize the flavor profile, as the recipe notes suggest options like Sriracha Way Better Snacks or Garden Salsa chips. Avoid overfilling the jalapeño halves to ensure even cooking and avoid spills during baking.
