Tortilla Eggs
Description
This recipe starts by frying an egg in butter over medium heat until opaque, seasoned with salt and pepper, then flipping it gently. Half the grated white cheddar cheese is added on the flipped side, and a 4-inch flour tortilla is placed atop the egg. After one minute, the egg and tortilla are flipped together so the tortilla bottoms the pan, then the remaining cheese is sprinkled and the pan covered to melt the cheese fully.
The cooking method allows the cheese to melt between the egg and tortilla, forming a delicate binding while the egg remains tender. The assembled dish is plated and topped with fresh garnishes like sliced tomato, green onions, avocado, jalapeño, and fresh cilantro, adding brightness and contrast to the richer egg and cheese.
This preparation serves as a quick, flavorful breakfast or light meal featuring a balance of textures from the soft egg, melted cheese, warm tortilla, and fresh vegetables.
