Traditional Italian Pizzelle Recipe
Description
This recipe for Traditional Italian Pizzelle starts with beating eggs and sugar, followed by adding melted butter, vanilla, and optional anise seeds. Flour and baking powder are sifted in to create a thick batter that holds together enough to drop by spoonfuls onto a nonstick pizzelle iron.
Cooking the batter in the pizzelle maker for about 1 minute and 40 seconds results in thin cookies with a golden brown color and crisp texture. The optional anise seeds contribute a distinctive licorice-like flavor, characteristic of Italian pizzelle, but can be omitted for a milder vanilla taste. Spraying the pizzelle maker with nonstick spray between batches prevents sticking.
Once cooked, the pizzelle are cooled flat to retain their shape and dusted with powdered sugar for a light sweetness. These cookies provide a crisp, delicate texture and are ideal for serving with coffee or tea, or for making rolled pizzelle cones filled with cream. The recipe advises attentive cooking to avoid burning due to their thinness and quick cooking time.
Ingredients
- 3 egg
- ¾ cups granulated sugar
- ½ cup butter melted and cooled
- 1 tsp vanilla extract
- ½ tsp anise seed optional
- 1 ¾ cup all-purpose flour
- 2 tsp baking powder
- powdered sugar for dusting
Instructions
- Beat the 3 eggs and ¾ cup sugar together until well-combined.
- Add the ½ cup butter, 1 tsp vanilla, and ½ tsp anise seeds. Beat again.
- Sift 1 ¾ cup flour and 2 tsp baking powder into the egg mixture and mix with a wooden spoon or rubber spatula. The batter should be thick enough to be dropped by a spoon (a mix between pancake batter and cookie dough).
- Spray a pizzelle maker with nonstick spray and drop a tablespoon of mixture onto the pizzelle maker.
- Close the pizzelle maker and allow the pizzelle to cook until they are brown. My maker takes about 1 minute and 40 seconds.
- Remove the pizzelle from the pizzelle maker and place flat on a cookie sheet to cool. Spray pizzelle maker with nonstick spray between each new round of pizzelle.
- Dust with powdered sugar if desired. Enjoy!
Notes
- Anise seeds offer a licorice-like flavor traditional to pizzelle; omit or substitute with vanilla or almond extract if desired.
- Use baking powder, not baking soda, for proper texture.
- Spray pizzelle iron with nonstick spray between batches to prevent sticking.
- Watch cooking time carefully to avoid burning, as pizzelle cook quickly.
- Use a fork to carefully lift pizzelle from the iron without breaking.
