Turkey Soup Recipe

Turkey Soup is the perfect laid-back meal after the Thanksgiving holiday rush. The hot, delicious broth is loaded with turkey, veggies, and noodles then simmered with herbs and spices.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion finely diced
  • 4 cloves garlic minced
  • 1 tablespoon all-purpose flour
  • 2 large carrots peeled and sliced
  • 2 stalks celery chopped
  • 1 red bell pepper diced - optional
  • 3 cups leftover turkey meat diced
  • 8 cups turkey broth or chicken broth
  • 1 teaspoon poultry seasoning
  • 1 teaspoon Italian dried herbs
  • 1 teaspoon dried parsley
  • 2 bay leaves
  • salt and pepper to taste
  • 2 cups fusilli noodles dry
  • 1 tablespoon fresh parsley chopped

Instructions

  1. Place a large pot or Dutch oven over medium-high heat and add the oil.
  2. Once shimmering, add the onion and cook until tender, about 3-4 minutes. Add garlic and cook for one more minute, stirring.
  3. Add the flour, stir and cook for 1 minute.
  4. Stir in carrots, celery, bell pepper, turkey, broth, poultry seasoning, dried Italian herbs, dried parsley, bay leaves, salt and pepper. Bring to a boil and simmer for 10 minutes. Taste and adjust for salt and pepper.
  5. Add the pasta and cook 8-10 minutes or until tender.
  6. Remove soup from heat, discard the bay leaves and garnish with fresh parsley.
