Turkey Taco Rice Skillet

This One Pot Taco Rice Skillet recipe combines ground turkey, rice, veggies, spices & pepper jack cheese for a quick and easy weeknight dinner that is so delicious!

Ingredients

  • 2 tbsp olive oil
  • ½ cup onion diced
  • 4 garlic cloves minced
  • 2 jalapeños de-seeded and minced
  • 1 lb ground turkey
  • 1 tsp kosher salt
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ¼ tsp cayenne pepper
  • 2 cups long grain white rice
  • 14.5 oz can diced tomatoes with green chilies
  • 3 cups chicken broth
  • ¼ cup finely chopped cilantro
  • ¼ cup fresh squeezed lime juice
  • 2 cups pepper jack cheese shredded

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. When the oil is hot, add the onion, garlic and jalapeno, cook for 3-4 minutes, add the turkey, salt, chili powder, cumin, paprika and cayenne pepper, cook 5-6 minutes.
  3. Once the turkey is cooked through, add the rice and cook for an additional 3-4 minutes.
  4. Add the can of diced tomatoes with green chilies and chicken broth.
  5. Bring to a boil, then reduce the heat to low, cover and simmer for 25-30 minutes, or until the rice is tender.
  6. Remove the lid and stir in the cilantro and lime juice.
  7. Sprinkle the pepper jack cheese over the dish, cover, remove from the heat and allow the cheese to melt into the dish for 3-5 minutes.
