Description

Instructions

  1. Grate cucumber coarsely over a strainer and large bowl. Squeeze and press out as much water as you can.
  2. In a bowl, combine grated cucumber with yogurt, garlic, dill, olive oil, lemon juice and zest, and salt.
  3. Refrigerate for at least an hour to chill and allow the flavours to meld.

Notes

  • Remove excess moisture from grated cucumber by squeezing through a sieve or wrapping in towels to prevent a watery sauce.
  • Use English cucumber skin-on for convenience or peel garden cucumbers if skins are tough.
  • Chill the tzatziki in the refrigerator for at least one hour to allow flavors to develop fully before serving.
