Description
To prepare Ube Halaya, grated fresh or frozen purple yam is cooked over medium heat with full-fat coconut milk and granulated sugar, stirring continuously to avoid lumps and ensure even cooking. Over 20 to 25 minutes, the mixture thickens into a creamy jam-like consistency. Vanilla extract is stirred in near the end to enhance aroma and flavor.
The resulting jam is smooth, rich, and vividly purple with natural sweetness from the sugar balanced by coconut milk’s richness. It can be transferred to a sterilized jar for cooling and storage in the refrigerator where it keeps for up to one week. Ingredients
- 300 g ube fresh or frozen, grated, purple yam
- 100 g coconut milk canned, full fat
- 36 g granulated cane sugar
- 5 ml vanilla extract
Instructions
- In a large pot over medium heat, add the grated ube, coconut milk and granulated sugar.
- Stir the mixture with a wooden spoon or spatula until the mixture is smooth.
- Reduce to medium-low heat and continuously stir until thickened and creamy.
- It will take about 20-25 minutes, depending on your stove's heat.
- Near the end of the cooking time, stir in the vanilla extract.
- Once thickened, transfer to a clean, sterilized glass jar and let cool.
- Store in the fridge for up to 1 week.
