Ukrainian Moms Roasted Cabbage Wedge Salad

This Roasted Cabbage Wedge Salad features baked cabbage wedges softened with steam, then marinated in a garlicky blend of vinegar, oil, and seasonings. Baking with foil and water lends the cabbage a tender but still structured texture. The dressing's garlic and vinegar provide tang, balanced by fresh dill for herbal notes. This recipe offers a unique warm vegetable salad that can serve as a fresh side or light starter.

Description

Starting with a medium head of cabbage cut into wedges, the recipe places the wedges on a baking sheet with water beneath and covers them with foil to trap steam during baking. This process at 350°F for 45 minutes softens the cabbage without making it mushy. After cooling, a marinade of salt, black pepper, pressed garlic, white vinegar, and neutral cooking oil is whisked and poured over sliced smaller wedges extracted from the roast.

The garlic flavor is distinctive with the vinegary dressing, while the dill adds a subtle fresh herb aroma. This roasted and marinated cabbage salad delivers a charming contrast between tender texture and piquant flavors. It can complement hearty meals or stand alone as a light, tangy salad.
