Vanilla Caramel Roasted Pears

Ingredients

  • 3 ripe-but-firm pears
  • 1 tbsp lemon juice
  • ¼ to ½ cup granulated sugar white or brown
  • ¾ cup heavy cream
  • ½ tsp vanilla extract
  • 3 tbsp pistachios pecans or walnuts, chopped, for garnish
  • vanilla ice cream frozen yogurt, or yogurt to serve with pears

Instructions

  1. Preheat oven to 375 degrees
  2. Peel pears and slice them in half
  3. Remove the stems and seeds, then place them cut-side-down in a large baking dish
  4. Sprinkle pears evenly with lemon juice and sugar
  5. Roast for 25-30 minutes, until pears are tender and a golden brown caramel is bubbling in the pan
  6. Pour heavy cream and vanilla into the caramel around the pears and bake for an additional 10-15 minutes, basting the pears once or twice with the sauce during that time
  7. Allow pears and sauce to cool slightly and sprinkle them with chopped nuts before serving
  8. Sauce will thicken slightly as it cools
  9. Serve each pear half with a scoop of ice cream or yogurt and a drizzle of sauce
