Ingredients

  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 stalks celery chopped
  • 1 green bell pepper chopped
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon crushed red pepper flakes
  • 4 cups vegetable broth
  • 1 28 oz. can fire roasted diced tomatoes
  • 1 lb black eyed peas soaked overnight, drained and rinsed
  • 1 bay leaf

Instructions

  1. In a large pot with a tight fitting lid, heat oil over medium heat, then add the onion, celery, and green pepper and cook, stirring frequently, until tender
  2. Add the chili powder, smoked paprika, salt, pepper and crushed red pepper flakes and cook for an additional 1-2 minutes.
  3. Add the beans, vegetable broth, canned tomatoes, and bay leaf and stir to combine.
  4. Bring mixture to a boil, then reduce heat to low and simmer for 1 ½ hours.
  5. Remove lid, stir, and simmer for an additional 45- 60 minutes, or until the beans are tender. Add water if needed as it cooks to ensure desired consistency.
  6. Serve warm with bread, or over rice.
