Vegan Blueberry Muffin Energy Bites
Description
The recipe starts with cashew or almond butter mixed with coconut sugar, lemon juice, vanilla extract, and a bit of salt, creating a rich, sweet base. Almond and coconut flours add bulk and texture while a small amount of chia seeds provides optional nutrients and texture contrast. Finally, dried blueberries are folded into the soft dough.
The energy bites are shaped into balls that have a chewy and slightly crumbly texture similar to blueberry muffins in small bites. The lemon juice brightens the flavor while the nut butter maintains richness.
These bite-sized snacks can be stored at room temperature for a day, refrigerated up to a week, or frozen for a month, offering convenient grab-and-go energy. They make a handy vegan snack with subtle blueberry muffin flavors.
The recipe notes suggest variations like adding lemon or orange zest, substituting nut butters with seed butters or dates for nut-free options, and experimenting with different flours or berries to adjust flavor and texture.
Ingredients
- 1/2 cup cashew butter or use almond butter, smooth
- 1.5 tbsp lemon juice
- 1/3 cup coconut sugar
- 1 tsp vanilla extract

- Roll into balls using hands or use cookie scoop to shape. Store on the counter for the day, refrigerate for upto a week and freeze for a month.
Notes
- Adding lemon zest brightens the energy bites with extra citrus flavor.
- Replace nut butter with seed butter or dates to make the recipe nut-free.
- Store in the fridge up to one week or freeze for up to one month to maintain freshness.
- Fresh berries can be used but require refrigeration due to faster spoilage.
