Ingredients
- 1 package (14.1 ounces) vegan puff pastry, thawed (Find this in the refrigerated section of your grocery store. Ensure it's specifically labeled vegan.)
- ½ cup vegan berry jam or preserves (Choose your favorite berry or a mix. Look for brands without gelatin.)
- ¼ cup plant-based milk (for brushing)
- powdered sugar, for dusting (optional)
Instructions
- Preheat and prepare: Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
- Prepare the pastry: Lightly flour a clean surface. Gently unfold the thawed puff pastry and lightly roll it out to smooth any creases. You might need to do this in two batches, depending on the size of your pastry sheets.
- Cut the pastry: Cut the puff pastry into squares (about 3-4 inches). You can use a pizza cutter or a sharp knife.
- Fill the pastries: Place about 1 teaspoon of vegan berry jam or preserves in the center of each square.
- Shape the "letters": This is where the fun begins! There are a couple of ways to fold them:1) Option 1 (Simple Triangle): Fold one corner of the square diagonally across to meet the opposite corner, forming a triangle. Gently pinch the edges to seal.2) Option 2 (More Elaborate "Letter"): Fold two opposite corners inwards so they almost meet in the center. Then fold the remaining two corners inwards to overlap slightly, creating a "letter" shape. Pinch all edges to seal.
- Brush with milk: Brush the top of each pastry with plant-based milk. This will help them brown nicely.
- Bake: Place the pastries on the prepared baking sheets, leaving about 1 inch between them. Bake for 20-25 minutes, or until golden brown and puffed up.
- Cool and dust: Let the pastries cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Dust with powdered sugar, if desired.
Notes
- Puff Pastry: Make sure your puff pastry is vegan! Not all brands are. Check the ingredients list carefully.
- Jam/Preserves: Choose a good quality vegan jam or preserves. Seedless is often preferred for easier filling.
- Sealing: Make sure to seal the edges of the pastries well to prevent the filling from leaking out during baking.
- Baking Time: Keep an eye on the pastries while they're baking, as they can brown quickly.
