Crispy, golden, perfectly eggy (without the eggs!), and packed with nostalgia, this Vegan Matzo Brei is the ultimate anytime comfort food.   • 4 heets unsalted matzo
  • cup unsweetened plant-based milk
  • ¾ cup JUST egg
  • ¼ teaspoon black salt or regular salt
  • ¼ teaspoon black pepper
  • 3 tablespoons vegan butter

Savory Toppings:

  • Sautéed onions or mushrooms
  • vegan sour cream
  • chopped fresh herbs chives or parsley

  • maple syrup

Instructions

  1. Break the matzo sheets into small pieces and place them in a large mixing bowl. Pour the plant-based milk over the matzo and let it soak for 30-45 seconds until softened but not mushy.
  2. In a separate bowl, whisk together the Just Egg, melted vegan butter, black salt (or regular salt), and black pepper until well combined. Pour the mixture over the soaked matzo and gently stir until the matzo is evenly coated.
  3. Heat a skillet over medium heat and add a small amount of vegan butter to coat the surface. Pour the matzo brei mixture into the skillet and cook for 5-7 minutes, stirring and flipping occasionally, until the mixture is set and lightly browned.
  4. Break up the cooked matzo brie into pieces and serve it hot, with additional salt and pepper if desired.
  5. To serve the matzo brie savory, top with sautéed onions and mushrooms, vegan sour cream, and herbs.
  6. To serve the matzo brie sweet, you can serve it with maple syrup, jam, vegan whipped cream, fruit, and/or powdered sugar.
