Vegan Potato Soup

This Vegan Potato Soup combines diced yellow potatoes with sautéed carrots, onions, celery, and parsley in a creamy cashew milk base. It uses flour as a thickener and involves puréeing part of the soup for a smooth, hearty texture. The soup simmers to bring the flavors together before final thickening.

Description

Vegan Potato Soup starts with sautéing carrots, onions, celery, and dried parsley in vegan butter to release their flavors. Flour is added to create a roux that thickens the soup later. The addition of vegetable broth, cubed yellow potatoes, cashew milk, and salt builds the soup's body. The mixture is simmered until the potatoes soften. Puréeing a portion of the soup contributes to a creamy, slightly chunky consistency that balances texture. The final boil thickens the soup to a satisfying, spoonable consistency without dairy products, making it suitable for vegan diets.

The soup’s mild seasoning and creamy texture make it versatile for serving as a light meal or starter. It pairs well with crusty bread or a simple salad.
