Vegan Pumpkin Cookies

These vegan pumpkin cookies are the perfect Fall treat! They’re packed with flavor from pumpkin and brown sugar, easy to whip up in 30 minutes, and they’re completely vegan.

Ingredients

  • ½ cup vegan butter
  • cup brown sugar
  • ¼ cup pumpkin puree
  • 1 tsp vanilla extract
  • 1 ½ cups all purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Instructions

  1. Pre heat the oven to 350F / 180C.
  2. In a medium bowl, beat together the vegan butter and brown sugar. Add the pumpkin purée and vanilla extract, and mix well.
  3. Add the flour, baking soda, baking powder and salt. Use your hands to combine into a cohesive dough. The dough should be soft.
  4. Line a baking sheet with paper parchment. Roll the cookie dough into 13 balls and arrange on the tray. Slightly flatten the balls using the back of a spoon, to help the cookies to spread when baking.
  5. Bake for 8 - 10 minutes on the middle oven rack. Remove baking tray from oven, and let cookies cool before serving. (They will firm up as they cool!)
