Description

Vegetable Loaded Sushi Doughnuts rely on cooked sushi rice that is soaked before cooking, then steamed until tender. The rice is combined with a seasoned mix of rice wine vinegar, maple syrup, and mirin to achieve a balanced, slightly sweet acidity. Frozen mixed vegetables are steamed and thoroughly drained to remove moisture before mixing into the rice.

The rice and vegetable mixture is packed firmly into donut-shaped silicone molds and then carefully inverted to retain shape. They are garnished with additional vegetables and sesame seeds, adding texture and visual appeal. This unique presentation offers a twist on traditional sushi, making it fun and approachable.

The rice must be fully cooled before shaping to ensure it holds together well, and draining the vegetables is essential to prevent sogginess. These sushi doughnuts can be served as a snack or appetizer.

Ingredients

  • 8.8 z sushi rice 250g
  • cup water 330ml cups
  • 2 tbsp rice wine vinegar
  • 2 tbsp maple syrup
  • 1 tbsp mirin
  • 5.3 z mixed vegetables frozen, 150g

Instructions

  1. Wash the sushi rice and let it stand for in water for 15 mins.
  2. Then transfer to a pot, add the water, bring to the boil and then reduce to a simmer for 15 mins. Switch off the heat and let the rice stand covered for another 15 mins, before leaving to cool completely.
  3. In a small bowl mix together the rice wine vinegar, the maple syrup and the mirin.
  4. Add 3 tbsp of the sauce mix to the rice and stir till well combined. You can add more sauce if you wish.
  5. Then steam the veggies according to the packet instructions and let cool. Drain any excess moisture from the veggies before mixing them with the rice.
  6. Set out two 6 cups donut silicon trays and divide the vegetable sushi mixture equally between these, stuffing the rice to form a doughnut shape.
  7. When done carefully invert the doughnut trays to remove your sushi doughnuts, top them with extras to your taste and serve.
