Veggie Latkelles (Waffled Latkes) with Lox

These waffled latkes combine shredded vegetables including carrot, zucchini, red bell pepper, onion, and potato into crispy waffle-shaped fritters. The addition of matzo meal or flour and baking powder helps them crisp and hold their shape. They are served with smoked salmon (lox), sour cream, dill, capers, and red onion, blending savory, tangy, and fresh flavors. The waffle iron cooking technique yields browned, crisp edges with a tender interior, offering a unique take on traditional latkes.

Description

Veggie Latkelles (Waffled Latkes) with Lox use a mixture of shredded vegetables: carrot, zucchini, red bell pepper, onion, and potatoes. After grating, excess moisture is squeezed out to ensure crispness. The mixture is bound with beaten eggs, matzo meal or flour, baking powder, salt, and pepper. Cooking the latke batter in a waffle iron browns the latkelles evenly, producing a crisp exterior and a moist, tender center.

The latkelles are served with smoked salmon (lox), sour cream, dill, red onion slivers, and capers, which add complementary flavors and textures. The smoky, salty salmon contrasts with the slightly sweet and savory vegetable pancakes, while sour cream and dill add creaminess and fresh herb notes.

This dish works well as a brunch item or appetizer, offering an inventive presentation for classic latkes. The waffle iron method streamlines preparation and shapes them uniformly, making serving easy alongside accompaniments.
