  • For the dressing:
  • 1/3 cup mayonnaise
  • 2 tablespoons yogurt plain full fat
  • 1 1/2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper freshly ground
  • FOR THE SALAD:
  • 2 cups apple cored and diced, firm red skinned
  • 1 cup grape halved, red, seedless
  • 1 cup celery sliced
  • 3/4 cup walnuts toast them on a lined baking sheet in the oven at 375F until their color slightly darkens, then let cool completely, toasted, chopped
  • 3 tablespoons raisins (can also use dried cherries or cranberries)

Instructions

  1. In a small bowl, whisk together the dressing ingredients. In a large mixing bowl add all of the salad ingredients. Pour over the dressing and stir to thoroughly combine. Serve immediately, otherwise cover and refrigerate.

Notes

  • For a lower-calorie dressing, substitute light mayonnaise and low-fat yogurt, and use a sugar alternative like stevia.
