  • 1 cup farro dry
  • 4 cups arugula
  • 2 cups watermelon cubed
  • 4 oz feta cheese cubed

Champagne Vinegar Dijon Dressing

  • 1 Tablespoon champagne vinegar
  • 1 teaspoon balsamic vinegar
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon honey
  • salt
  • black pepper

Instructions

  1. Cook farro according to package instructions.
  2. When the farro is ready, add arugula, farro, cubed watermelon and cubed feta cheese to a large salad bowl. 
  3. Mix all dressing ingredients in a small mixing bowl and drizzle the dressing over the salad. 
  4. Store it in the refrigerator and eat within a couple of days.
