Watermelon Popsicles (Paletas de Sandía) start with fresh watermelon chunks blended into a smooth puree. The mixture is carefully strained to remove seeds if desired, then poured into popsicle molds and frozen until solid.

The popsicles retain the juicy, subtle sweetness of watermelon with a refreshing tartness from lime. Freezing concentrates the flavors, and the icy texture is smooth since the puree is well blended and strained. They provide a light, hydrating treat that can be enjoyed straight from the freezer.

To release the popsicles easily, the molds should be briefly held under warm water. They can be eaten immediately or stored frozen for up to two weeks, maintaining their flavor and texture.

Ingredients

  • 5 cups watermelon fresh, chunks
  • 2 Tablespoons sugar or 2 packets of stevia natural sweetener
  • ½ Tablespoon lime juice fresh

Instructions

  1.  In a blender, puree the watermelon until all chunks are gone.
  2. Strain the mixture if to remove any seeds.
  3. Add the sweetener and lime juice. Blend again until everything is pureed well.
  4. Pour mixture equally into 10 popsicle molds. Attach covers and sticks. Note: don't overfill the popsicle molds, as the mixture will expand as it freezes.
  5. Freeze popsicles upright until firm, at least 3 hours or up to 2 weeks. 
  6. Hold each mold up to the rim under warm running water just until paletas are released from sides of molds, 5 to 15 seconds. Remove covers and pull out popsicles.  
  7. Eat immediately or store in freezer. 

Notes

  • Select watermelons with orange-yellow ground spots for optimal sweetness.
  • Do not overfill popsicle molds as the mixture expands when freezing.
  • Freeze popsicles upright for at least 3 hours or up to 2 weeks for best texture.
  • Release popsicles by holding molds under warm water briefly before removing.
