This Watermelon Salad is made with cubed watermelon, crumbled feta or cotija cheese, mint leaves and an easy lime dressing that brings everything together!

Ingredients
For the salad
- 8 cups watermelon chilled (about 1/2 medium-large fruit, cubed
- 1/2 cup cotija cheese or feta cheese, crumbled
- 1/2 cup onion red, chopped
- 3 tablespoons mint leaves thinly sliced
- 1 jalapeno pepper chopped
For the dressing
- 2 lime zested and juiced
- 2 tablespoons olive oil
- 1/4 teaspoon salt plus more to taste
Instructions
- In a large bowl, add the watermelon, cheese, red onion, mint and jalapenos.
- In a small bowl, whisk together the lime zest, lime juice, olive oil and salt.
- Pour the lime dressing into the large watermelon bowl and gently toss everything together.
- Serve immediately.
Notes
- I recommend chilling the watermelon before making the salad.
- This salad is best served immediately after making.
