Whipped Feta
Description
This Whipped Feta recipe blends feta cheese and Greek yogurt to create a smooth, creamy spread flavored with fresh lemon juice and zest, olive oil, salt, and pepper. The whisking softens the crumbly feta while the lemon brightens the mixture. Fresh mint adds a herbal note on top, and pine nuts contribute a crunchy texture and subtle richness. The olive oil drizzle enhances mouthfeel and flavor depth.
The spread can be served immediately to retain a soft consistency before it thickens. It works well as a dip, a spread for crackers or bread, or a garnish for salads and grilled vegetables. The fresh herbs, lemon, and olive oil create a balanced and refreshing profile.
Using high-quality feta and fresh herbs ensures the best texture and flavor. If the feta is dry or crumbly, adding extra olive oil before blending helps achieve a smoother result. Avoid zesting the lemon's white pith to prevent bitterness.
Ingredients
- 200 g feta cheese
- 250 g Greek yogurt
- 0.5 lemon juice and zest only
- 2 tablespoon olive oil
- 1 pinch sea salt
- 1 pinch black pepper
- 2 tablespoon mint finely chopped, fresh
- 2 tablespoon pine nuts
Instructions
- Put 250 g Greek yogurt and 200 g Feta into a blender jug.
- Add juice and zest of 0.5 Lemon, 2 tablespoon Olive oil and 1 pinch Sea salt and ground black pepper.
- Blend until you have your desired consistency.
- Transfer to a bowl and swirl the top with the back of a spoon. Top with 2 tablespoon Fresh mint and 2 tablespoon Pine nuts and more oil (optional).
Notes
- Avoid zesting the lemon's white pith, as it can impart bitterness to the spread.
- Use fresh herbs like mint rather than dried to maintain bright, fresh flavors.
- Choose good quality feta; if using a drier variety, increase olive oil slightly to reach a smooth consistency.
- Serve whipped feta immediately for the best texture, as it will thicken upon resting.
