White Peach Raspberry Almond Salad

White peaches, plump raspberries, candied almonds, greens and creamy cheese tossed in a sweet dressing. A perfect summer salad!

Ingredients

  • 6-10 cups Baby Spring Mix or Romaine Hearts chopped
  • 2 White Peaches or Nectarines sliced
  • 6 ounces raspberries
  • 1 cup Feta Cheese or White Cheddar Cheese
  • 3/4 cup sliced almonds
  • 3 Tablespoons sugar
  •  

Sweet Dressing:

  • 3/4 cup olive oil
  • 2 Tablespoons red wine vinegar
  • 3-4 Tablespoons sugar
  • 1/2 teaspoon salt

Instructions

  1. Place greens on large platter or in bowl. Top with fresh peaches, raspberries, and cheese.
  2. In small saucepan, heat almonds and sugar over low heat, stirring often. As the sugar starts to melt, stir to coat almonds and to keep from burning. Once sugar is melted and almonds are nicely coated, remove from heat and place candied almonds on wax or parchment paper. Let cool.
  3. Sprinkle candied almonds over salad.
  4. To make sweet dressing: In small bowl or shaker bottle, mix oil, vinegar, sugar, and salt. Place in refrigerator until ready to serve.
