Ingredients
- 4 pounds chuck roast
- 10 1/2 ounces beef broth
- 1 teaspoon salt plus extra to season the gravy
- 1/4 teaspoon ground black pepper plus extra to season the gravy
- 1/2 teaspoon crushed rosemary
- 4 carrots chopped lengthwise
- 8 small White onions peeled
- 1/4 cup all-purpose flour
Instructions
- Brown the beef on both sides in a large heavy pan.
- Pour in the beef broth. Cover and cook over low heat for 2 hours and 30 minutes.
- Add the salt, pepper, rosemary, carrots, and onions.
- Cover the pot and cook for 1 more hour, or until vegetables are done.
- Transfer the beef and vegetables to a serving dish.
- Combine the flour with 1/4 cup water and mix well. Then stir the flour mixture slowly into the pan juices.
- Cook, stirring constantly, until gravy is thickened.
- Season with additional salt and pepper.
