Description

Zucchini Dip starts with frying sliced medium zucchinis and chopped garlic in olive oil until the zucchinis soften and begin to brown, which adds a mild caramelized flavor. Seasoned with salt and black pepper during cooking, the vegetables are then cooled. Transferring to a food processor, the mixture is combined with coconut yogurt and lemon juice and pureed to preference, producing a creamy texture with a subtle tang and freshness.

The dip is finished by drizzling olive oil on top and garnishing with mint leaves, enhancing its herbal aroma and adding color contrast. The coconut yogurt base provides a gentle tang that contrasts with the warm sautéed zucchini and garlic.

Ingredients

  • 2 tbsp olive oil
  • 2 zucchini zucchinis sliced, medium size
  • 2 cloves garlic chopped
  • salt
  • black pepper ground
  • 25 mint leaves
  • salt
  • 60 ml coconut yoghurt
  • 2-4 tsp lemon juice

Instructions

  1. Heat frying pan with one tbsp of olive oil.
  2. Add courgette and garlic to frying pan and season with salt and pepper.
  3. Fry for about 10 mins till courgettes are soft and starting to brown, then remove from heat and let cool.
  4. Then transfer mix to food processor adding in yoghurt and lemon juice and puree to desired consistency. Adjust seasoning.
  5. Transfer to serving container and drizzle on some olive oil, garnish with mint leaves and enjoy.
