  • 3 egg
  • 1 cup butter melted
  • 1 tbsp vanilla extract
  • 1 banana mashed
  • 1 1/2 cups zucchini about 2 medium zucchinis) - rung out, shredded
  • 2 1/2 cups sugar
  • 3 cups all-purpose flour
  • 2 tbsp cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 1 cup walnuts chopped, optional
  • 1 cup chocolate chips optional

Instructions

  1. Preheat oven to 350.
  2. In a large bowl, whisk together eggs butter and vanilla. Add mashed banana and shredded zucchini and mix until combined. Set aside.
  3. In another bowl, mix dry ingredients - sugar, flour, cinnamon, baking soda, salt and baking powder.
  4. Add dry ingredients to wet ingredients and mix until combined.
  5. Pour into muffin liners and fill until 2/3 - 3/4 full.
  6. Bake at 350 for 20-25 minutes.
