100 Calorie Easy Healthy Chickpea Blondies
Description
This recipe produces chickpea blondies that blend rinsed canned chickpeas with almond butter, ripe banana, and sugar-free maple syrup into a batter enhanced with vanilla protein powder and baking soda. Chocolate chips folded in provide bursts of sweetness amid a dense, moist crumb.

Ingredients
- 1 (15-oz) chickpeas rinsed and drained, canned, 270g
- 1/4 cup almond butter I used American Dream Nut Butter Bundle up Blondie, 56g
- 1 medium banana ripe, 120g
- 1/4 cup maple syrup sugar free, 60g
- 1 tsp butter extract
- 1/4 cup protein powder I used PEScience vanilla, 31g
- 1/2 tsp baking soda
- 2 tbsp chocolate chips mini, 28g
Instructions
- Preheat oven to 350 °F and spray 9x9 inch baking pan with cooking spray.
- In a blender or food processor, add all the ingredients except the chocolate chips and blend until smooth. Remove the blade and stir in half of the chocolate chips.
- Add batter to baking pan and spread out evenly. Then sprinkle the remaining chocolate chips on top. Bake for 20-25 minutes, or until toothpick inserted in center comes out clean.
- When done, let cool, then keep covered and stored in the fridge. They taste best the next day when the flavors come together!
