2-Ingredient Vegan PayDay Bites

These 2-Ingredient Vegan PayDay Bites are made by combining chopped nuts and sticky Medjool dates to form bite-sized snacks coated in nuts for texture. The recipe requires no added sweeteners beyond the natural sugars in dates and offers a chewy, nutty treat. Optionally, a pinch of sea salt can enhance the flavor contrast. Their simple composition and no-bake preparation make them convenient for quick homemade energy bites or snack bars.

Description

2-Ingredient Vegan PayDay Bites use a blend of peanuts and cashews combined with fresh, sticky Medjool dates to create a compact, sweet, and nutty bite. The nuts are pulsed to a coarse chop, then the dates are processed until sticky and cohesive. The mixture is shaped into small balls and rolled in chopped nuts for an added crunchy coating. A pinch of salt can be added to balance the sweetness.

The dates provide natural sweetness and chewy texture, while the nuts contribute crunch and richness. Rolling the bites in nut pieces ensures a pleasant contrast in texture. No baking is required, maintaining the fresh qualities of the ingredients.

These bites can be refrigerated to firm up or stored frozen for longer preservation. If dates are dry, soak them briefly in warm water to restore their moisture before preparing. Nutritional content varies slightly depending on the nut mix chosen. They provide a handy vegan-friendly snack option suitable for day-to-day energy needs.

Ingredients

Servings
  • 1 ¼ cup nut we chose peanuts and cashews // or sub desiccated coconut, roasted, salted
  • 2 cups Medjool date sticky and fresh!* // measured after pitting // 1 cup contains ~19 dates, packed, pitted
  • 1 pinch salt optional, sea salt

Instructions

  1. Add nuts to a food processor and pulse several times to loosely “chop.” You aren’t looking for a meal — just chopped. Set aside on a plate or in a shallow bowl.
  2. To the food processor, add pitted dates and sea salt and process until small bits remain or a ball forms. Scoop out ~16 even bites (you can use this scoop!) and roll them into balls with your hands. They will be a little sticky — that’s okay!
  3. Begin rolling date bites into the nut mixture to coat, pressing down gently to encourage sticking. Continue until each date bite is thoroughly coated with nuts. (Optional: To coat even more thoroughly, you can pulse any remaining nuts into a loose meal in the food processor and then roll date bites through again to coat — the finer texture will cause more nuts to stick).
  4. Enjoy as is or transfer to the refrigerator to chill for 1 hour. Store leftovers covered in the refrigerator up to 2 weeks or the freezer up to 1 month (sometimes longer). If frozen, let thaw slightly before enjoying.

Notes

  • Use fresh, sticky Medjool dates; soak dried dates in warm water for 10 minutes and drain to soften before use.
  • Refrigerate the bites for at least an hour before serving for firmer texture.
  • Store leftovers covered in the refrigerator for up to two weeks or freeze for up to a month.
