20 Minute Chicken Broccoli Stir Fry (Video)

Extra saucy chicken, broccoli, and mushroom stir fry made in one-pan and ready in under 20 minutes. This finger-licking chicken and broccoli is delicious on rice or noodles and is much healthier than take-out!

Ingredients

Servings
  • 1 lb chicken breast cut into small pieces, boneless
  • 2 tablespoons neutral cooking oil canola, vegetable, or oil of choice, generic cooking oil
  • 1 tablespoon garlic minced
  • 1 tablespoon ginger minced or grated (optional, fresh
  • 2 cups broccoli florets
  • 1 cup mushroom white, baby bella, or shiitake (optional, sliced

For the Sauce

  • 1/2 cup chicken broth low-sodium, or water
  • 1/4 cup soy sauce low-sodium
  • 1 tablespoon cornstarch
  • 1 tablespoon honey or sugar or sweetener of choice
  • 1 tablespoon sriracha optional, or chili paste

Instructions

  1. Whisk all the ingredients for the sauce and set aside.
  2. Heat a large heavy-duty pan on high heat. Add the oil, garlic, and ginger, sautee for 30 seconds or until it begins to brown. Add the chicken and cook for 5-7 minutes or until the chicken is browned and cooked through.
  3. Add the broccoli and mushrooms and stir for 2 minutes or just until the broccoli begins to soften.
  4. Pour the prepared sauce into the pan and simmer for another 2 minutes or until the sauce is thickened. Serve with rice or noodles; garnish with sesame seeds if desired.
