30 Minute Taco Soup is as ridiculously delicious as it is easy to make! Everything is tossed together in a single pot, for a flavorful soup in just 30 minutes. You’re going to be seriously amazed!

Ingredients
- 1 pound ground beef
- 1 medium white onion diced
- 1 tablespoon minced garlic about 3 cloves
- 2 cups chicken broth
- 2 cups beef broth
- 2 (15 ounce cans) diced tomatoes undrained
- 1 (15 ounce can) black beans drained and rinsed
- 1 (15 ounce can) pinto beans drained and rinsed
- 1 cup frozen corn
- 1 (7 ounce can) diced green chiles
Taco Seasoning Mix
- 1 tablespoon chili powder
- 2 teaspoons paprika
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
Instructions
- Heat a large pot over medium-high heat. Add 1 pound ground beef and 1 medium white onion (diced). Cook, stirring occasionally, until the beef is browned and the onion is softened, about 5 to 7 minutes. Drain any excess grease.
- While the ground beef is cooking, make the taco seasoning mix in a small bowl. Stir together 1 tablespoon chili powder, 2 teaspoons paprika, 1 teaspoon ground cumin, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/4 teaspoon cayenne pepper.
- Add 1 tablespoon minced garlic to the pot and cook for 1 minute, stirring constantly. Then, stir in the prepared taco seasoning mix and cook for 30 seconds to release the flavors.
- Pour in 2 cups chicken broth, 2 cups beef broth, 2 (15 ounce cans) diced tomatoes, 1 (15 ounce can) black beans, 1 (15 ounce can) pinto beans, 1 cup frozen corn, and 1 (7 ounce can) diced green chiles. Stir to combine.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for 15 to 25 minutes, allowing the flavors to meld.
- Ladle the soup into bowls and serve hot with your favorite toppings, such as shredded cheese, sour cream, diced avocado, or tortilla chips.
Notes
- Suggested Toppings for Serving: sour cream, tortilla chips or strips, shredded cheese, sliced or pickled jalapenos, chopped fresh cilantro.
- Instead of using the taco seasonings as listed, you can replace them with a 1-ounce packet of taco seasoning mix.
