5-Minute Cold Brew Coffee Latte Recipe

  • 2 Medjool dates
  • ½ cup cashew milk (or almond milk)
  • 1 tablespoon unsalted peanut butter (optional)
  • 1 pinch of salt
  • Ice cubes (see notes)
  • 1 cup cold brew coffee (see notes)

Instructions

  1. Place dates, milk, peanut butter, and salt in a blender.
  2. Blend until all the dates have completely disintegrated and you have a sweet, frothy milk mixture. Set aside.
  3. Fill a large drinking glass or mason jar with a few ice cubes (about 3 to 4).
  4. Pour in the cold brew coffee.
  5. Fill the glass to the top with the frothy milk mixture. Stir to combine and enjoy!

Notes

  • I prefer to serve this cold-brew latte with cashew milk ice cubes. Cashew milk freezes well and pops easily out of ice cube trays. However, you can replace them with coffee ice cubes (freeze some cold brew concentrate into ice cube trays) for a less diluted latte.
  • It's so easy to make cold brew coffee at home, and I have an excellent recipe for you on the blog. You can even make yours caffeine-free. However, you can also use store-bought cold brew coffee. 
  • You can use unsweetened milk, plant milk, or cream you love. I often choose unsweetened (vanilla) cashew milk because it adds a lovely nutty flavor and is already naturally sweet. Almond, oat, or hazelnut milk are great alternatives.
  • If you want a stronger latte, go for about ¼ cup of milk per cup of coffee. Taste test and find your perfect coffee-to-milk ratio!  
  •  
  • The dates add a natural, sweet caramel flavor. Blend the dates with the milk using a high-powdered blender until completely pulverized. 
  • Adjust to taste. I use one date for every ¼ cup of milk. It's enough to add natural sweetness without losing the coffee flavor. Of course, adjust to taste.
  • You can, of course, totally omit this, but I highly recommend adding a pinch of salt as it nicely balances the sweet flavors.
  • Go a bit extra fancy, and add a tablespoon of salted peanut butter to the sweet milk mixture—reminiscent of a peanut butter latte or coffee smoothie. This concoction is delicious, like a thicker salty caramel version—but still healthier. Use almond butter if you follow a Paleo or whole30 diet or are allergic to peanuts!
  • You can make this cashew milk-date blend in advance and in bulk, then store it in the fridge whenever you want to sweeten your iced coffee.
