  • 3 (8-ounce) packages cream cheese, softened
  • cups sugar, divided
  • teaspoons vanilla extract, divided
  • 5 eggs
  • 1 cup sour cream
  • cups cherry pie filling

Instructions

  1. Preheat oven to 300°F.
  2. Beat cream cheese, 1 cup sugar, and 1 teaspoon vanilla in a large bowl, until smooth. Add eggs, one at a time, beating after each addition. Spoon into foil-lined muffin cups.
  3. Bake at 300°F for 25-30 minutes. To check if done insert a toothpick in the center. If it comes out clean, take cupcakes out of the oven. Cool for at least 5 minutes.
  4. Combine sour cream, remaining sugar, and vanilla until smooth in a small bowl. Spoon mixture on top of cupcakes. Place back in oven for an additional 6-8 minutes, until set. Cool for 10 minutes before moving to wire racks to cool.
  5. Top with pie filling. ENJOY! Store in the refrigerator.
