Ingredients

Servings
  • 2 cups pistachios raw, shelled
  • 1 tbsp olive oil or olive oil spray

Original Salted Pistachios:

  • 1 tsp salt

Chili Roasted Pistachios:

  • 1 tsp chili powder
  • 1 tsp brown sugar
  • ½ tsp cayenne pepper
  • ½ tsp garlic powder
  • ½ tsp salt

Honey Roasted Pistachios:

  • 1 tbsp butter omit the olive oil for this flavor
  • 1 tbsp honey
  • ½ tsp salt

Curry-Spiced Pistachios:

  • 2 tbsp brown sugar
  • 1 tsp curry powder
  • ¼ tsp cayenne pepper
  • ½ tsp cumin
  • ½ tsp salt

Rosemary Roasted Pistachios:

  • 1 tsp dried rosemary
  • ½ tsp salt
  • ¼ tsp black pepper

BBQ Pistachios:

  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper

Sweet & Savory Pistachios:

  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • ½ tsp salt
  • ¼ tsp cayenne pepper
  • ¼ tsp smoked paprika

Instructions

  1. Preheat oven to 375°F.
  2. Spread the pistachios on a baking sheet in a single layer.
  3. For Honey Roasted Pistachios only: Melt the butter in the microwave in a small, microwave safe bowl. Stir in the honey. Drizzle over the pistachios and toss to coat.
  4. For all other Flavors: Drizzle the pistachios with the olive oil and seasonings—for your flavor of choice!
  5. Roast 10–12 minutes, tossing occasionally, until toasted to your liking.
  6. If storing the nuts for later, spread them on a sheet of parchment paper. Allow them to dry and cool for at least one hour. Make sure they are completely dry, and then store in an airtight container for 3–5 days.
