Addictive Izakaya Style Salted Cabbage (Yamitsuki Cabbage)
Description
Addictive Izakaya Style Salted Cabbage (Yamitsuki Cabbage) uses crisp green cabbage dressed in a sesame-flavored seasoning blend. Toasted sesame oil and seeds provide a nutty aroma, while garlic and black pepper add depth and mild heat. The use of Chinese-style chicken bouillon granules adds umami and savory complexity, balanced by salt. The cabbage remains raw but is rubbed with the seasonings to marinate it lightly.
The preparation is quick, using a large bowl to mix all the seasoning ingredients before massaging them onto roughly chopped cabbage leaves. This technique infuses flavor throughout every leaf. The optional chili threads garnish adds subtle heat and a decorative touch.
This recipe is ideal for a small serving for two people but can be scaled up. Seasoning amounts can be adjusted to taste, and the seasoning mix can be prepared ahead and applied just before serving. The dish pairs well as a side or light snack, offering a refreshing counterpoint to richer dishes.
